Simple Clean Eats - Recipe #1 Fried Cauliflower Rice

I have been getting asked TONS of questions about the food we eat every week for our meal plan. I decided I am going to share with you all some of our favorite recipes each week!

To be honest, I am not the world’s best cook. I am not very creative and I have never really enjoyed being in the kitchen… until recently. I started to expand my horizons and learn more about simple and clean foods that do not require much prep time AND are tasty.

This recipe is SO EASY I almost cried the first time I made it out of joy. I was most worried about the taste and consistency of the cauliflower. I was seriously craving some vegetable fried rice and I was PRAYING this would ease my cravings. Surprisingly it tastes almost EXACTLY the same as what I have eaten from our local Asian cuisine restaurant without the added sauces, salt and carbs! Cauliflower rice is a great substitute for regular rice.

This dish was so good that now we make it on a weekly basis as one of our go-to meals when we do not feel like cooking something brand new or time consuming. We use frozen veggies and frozen cauliflower rice however you can also find both prepared fresh for you in your local grocery store.

We do add Gardein brand Mandarin Orange Chicken just about every time we made it. No we are not vegan and we are aware that the chicken is meatless. But guess what... it is BETTER than any chicken we have ever made to go with this rice! This particular "chicken" takes 8 minutes to prep and tastes wonderful with the rice. Feel free to use this or any other protein you enjoy with your cauliflower fried rice.

Overall the rice should take you no more than 10 minutes to prepare and this recipe does make about 4 servings. Each serving is about 1.5 cups of your vegetable servings in a day! I hope you enjoy. Leave questions and comments below!
