Lately, we have been pairing hummus with our veggies as our health fat portion for the day. We LOVE hummus but are so ready for a change up. I think we accidently found our new dip for a few weeks - the good news - it fits RIGHT into our meal plan.
This past weekend we hosted a Holiday Party and I found a recipe for spinach artichoke dip that not only had 4 times less calories than store bought but was ALSO vegan. The recipe seemed simple, and you know me, if its not simple... I am very turned off by it!
We have a few friends that are dairy free so anything party recipes we can find that can fit into their lifestyle we are excited to try! Little did we know that we would end up REALLY enjoying this recipe and can now incorporate the left overs into our weekly meal plan.
This recipe makes about 8 servings (1/4th cup each serving) and per serving is jammed pack with 1 cup of veggies and 1/2 a portion of your healthy fat! I usually dip half a cup of veggies (to get my servings in) but if you prefer corn chips or whole wheat crackers you could use a carb portion as well.
